Mini Pecan Pie Bites 1080x600

INGREDIENTS:
  • 2 Tablespoon melted Butter
  • 1 Cup Sugar
  • 1 Cup Light Karo Syrup
  • 1 tsp. Rustlin’ Rob’s Mexican Vanilla
  • 3 Eggs
  • 2 boxes ready-made, room temperature pie crust
  • 1 ½ - 2 Cups chopped Pecans
DIRECTIONS:
  1. Preheat oven to 325 degrees.
  2. Using Mixer – blend until smooth first 5 ingredients.
  3. Using a glass or biscuit cutter- cut circles out of ready-made pie crust.
  4. Form pie crusts in mini muffin pan, pinch extra at the top, to form an edge for the crust.
  5. Place a few pecans in each shell then add the liquid, top with a few more pecans.
  6. Bake for 20 minutes.
