INGREDIENTS:
- 2 Tablespoon melted Butter
- 1 Cup Sugar
- 1 Cup Light Karo Syrup
- 1 tsp. Rustlin’ Rob’s Mexican Vanilla
- 3 Eggs
- 2 boxes ready-made, room temperature pie crust
- 1 ½ - 2 Cups chopped Pecans
DIRECTIONS:
- Preheat oven to 325 degrees.
- Using Mixer – blend until smooth first 5 ingredients.
- Using a glass or biscuit cutter- cut circles out of ready-made pie crust.
- Form pie crusts in mini muffin pan, pinch extra at the top, to form an edge for the crust.
- Place a few pecans in each shell then add the liquid, top with a few more pecans.
- Bake for 20 minutes.
