Mexican Vanilla

INGREDIENTS:
  • 1 1⁄4 cups sugar
  • 2 tbsp all-purpose flour
  • 1/2 cup butter, melted
  • 3 eggs, beaten
  • 1/2 cup buttermilk
  • 1 tsp Rustlin' Rob's Mexican Vanilla
  • 3 1/2 ounces flaked coconut, divided
  • 1 unbaked 9-in pie shell
DIRECTIONS:
  1. Preheat oven to 325 F.
  2. Combine the sugar and flour in a large bowl.
  3. Add melted butter, eggs, buttermilk, Mexican vanilla, and 2/3 of the coconut.
  4. Mix well.
  5. Pour mixture into shell.
  6. Sprinkle with remaining coconut.
  7. Bake for 1 hour or until set.
