INGREDIENTS:
  • 1 lb. Rotini pasta noodles
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 6 oz. can of sliced black olives
  • ½ pound of Asiago cheese or parmesan
  • 2 cups grape tomatoes, halved
  • For Dressing:
  • ¾ cup olive oil
  • ¼ - ½ cup Rustlin’ Rob’s Raspberry Balsamic Vinegar
  • 2 tbsp. of Italian dressing (we used Rustlin' Rob's Triple Cheese Vinaigrette)
  • 2 tbsp. fresh herbs (parsley or oregano)
  • Salt and pepper to taste
DIRECTIONS:
  1. Cook pasta according to directions on box.
  2. In a large bowl mix peppers, olives, cheese, tomatoes and pasta.
  3. Combine all dressing ingredients in a separate bowl, add to salad, and toss.
  4. Refrigerate for 1 hour. Serve and Enjoy!
