Beef Chili Sauce :
1 Tbs. Olive oil
1 medium onion, chopped
4 Lg. Garlic cloves, chopped
¾ pound lean ground beef
28- ounce can tomatoes, untrained, pureed in food processor
¼ cup bread and butter jalapenos, drained, coarsely chopped
2 Tbs. best-quality chili powder
1 tsp. Dried oregano
Salt
1/8 tsp. Ground cloves
Grated Monterey jack or Cheddar Cheese
Sour Cream
Fresh cilantro leaves, coarsely chopped
Heat oil in large nonstick skillet over medium-high heat. Add onion and garlic and cook for 2 minutes or until tender. Add beef and cook, breaking up meat with fork, until no pink remains. Tilt pan and discard excess oil. Stir in pureed tomatoes, chiles, chili powder, oregano, salt, and cloves; cook for 10 minutes or until slightly thickened. Add drained pasta to pan and toss until combined. Serve with separate bowls of cheese, sour cream, and cilantro. Serves 4.
